I marinated chicken breasts in lemon and garlic dressing first for a couple hrs, you can also marinade over night! Next I sauteed chicken in my cast iron skillet with avocado oil to prevent sticking, for about 4 -5 min per side. or until done. I also like to use a meat tenderizer for even cooking and less time! If you don’t have one, try a rolling pin and pound away!
Toss fresh spinach leaves with dressing and top with diced chicken, blue berries, non salted sun flower seeds, cherry tomatoes or strawberries . Some feta cheese would also go great with this! Enjoy!
