This Parmesan Chicken is very versatile you can even sub for fish or pork.
Preheat oven to 350 degrees
Cut spaghetti squash in oven and scoop seeds out, drizzle with olive and season with salt and pepper, cook face side down steam squash and cook for about an hr. using a fork scoop out squash making noodles.

In one bowl add parmesan cheese, parmesan bread crumbs, lemon zest, garlic powder and salt and pepper, in another bowl 2 eggs, dip chicken is egg wash then dry ingredients and drizzle with olive oil
preheat oven to 425 degrees bake chicken for 30-35 min or until no longer pink and top is browned
While chicken is baking I sliced brussel sprouts very thin (shaved) diced carrots and minced 1 garlic clove, and sauteed them in my cast iron skillet
Now this part is up to you! add some alfredo or spaghetti sauce on top of your spaghetti squash noodles
Top with brussel sprouts and carrots, diced chicken, cherry tomatoes, salt and pepper, red peeper flakes and parmesan cheese!
