Add Protein if you’d like!
Cut Spaghetti Squash in half and take the seeds out. Place Spaghetti Squash in baking dish face side up, drizzle with Olive oil and Season with Salt & Pepper.
Bake Spaghetti Squash 375 for a good hour, times will vary depending on the size it will take longer
If you are adding Protein, cook that now. I used Italian Sausage!
Cut up Veggies
Sautee your onions first, then add garlic and mushrooms and cook for 5 min, add peppers and carrots ( you can also add red pepper flakes for a kick) cook for 3 min, add zucchini this will not take as long to cook as your others veggies! add tomatoes and squeeze of lemon at end! season with salt and pepper
Using a fork scrape your spaghetti squash making noodles!
Top with Veggies !
Add some Parmesan Cheese and Enjoy! You can also add a tomato sauce if you would like and a protein .
Ingredients: Spaghetti Squash, Onion, Garlic, Portabella Mushrooms, Green Bell Pepper, Carrots (I used a peeler to make ribbons), Zucchini, Tomatoes, Italian Sausage, Parmesan Cheese, Lemon, Red Pepper Flakes, Salt & Pepper
