Ingredients: Chicken breasts, Red Potatoes, Brussel Sprouts, Fresh Rosemary, Garlic Cloves, Parmesan Bread Crumbs, Parmesan Cheese, Lemon, Salt & Pepper, and Red Pepper Flakes.
If your cooking for 2 you can use one sheet pan, I like to bake extra chicken and save for my meal prep! So I used 2 sheet pans here, one for chicken the other for veggies. line sheet pans with foil.
Drizzle Chicken with Olive Oil and Season each side with Salt & Pepper. Dip each breasts into bread crumb mixture. Parmesan Bread Crumbs, Parmesan Cheese, Lemon Zest, Garlic Powder and Salt & Pepper. I like to add a little extra lemon zest on the top,)
Cut up your Veggies and toss with Olive Oil , Salt & Pepper, Lemon Zest and Fresh Sprigs of Rosemary
Bake at 400 degrees for 35-45 min I like my chicken to be at 185 degrees and veggies to be crispy! If you like thing with a little kick like me I also add Red Pepper Flakes,) little heat also boosts your metabolism!
Serve with Lemon Wedge and Parmesan Cheese
