Boneless Chicken Breasts, Sweet Potatoes, Quinoa, Cherry Tomatoes, BBQ Sauce
Preheat Oven to 400 degrees. Wrap Sweet Potatoes in foil, (first drizzle with olive oil )bake for 20 min before adding your bbq chicken to the oven
Pound Chicken breasts so they are even width, Season with Smoked Paprika, Garlic and Onion Powder, Seasoning Salt, Pepper. Bake at 400 degrees for about 40 min or until chicken temp is at 185 degrees and potatoes are tender. I like to add bbq sauce the last 5 min of cooking time and crank the oven up to low broil if you like that charbroiled flavor,) be careful not to burn it
Cook Quinoa according to package ( last 20 min of bake time)
Add Cherry tomatoes and Fresh Cilantro to your plate and season with salt and pepper
